| Dining at La Corsette is truly a special occasion. According to tradition, the main course is selected from a list by the first person to make reservations. John then tailors the rest of the meal to complement it. Main dishes have included French veal in cream, roasted loin of pork with prune chutney, and orange roughy with walnut cream sauce. |
The meal is not simply nourishment, it is an experience in fine dining. Each table is elegantly set with linens, silver and crystal. Courses are served over a leisurely three-hour period. A tuxedoed waiter offers a wine list and water glasses are filled. One the table are a handwritten card with the evening's menu, Swedish butter curls, strawberry or other flavored butter, and John's famous French bread. Piano music plays softly in the background, the wine is poured and the bread broken. Each course is presented and the emptied plates silently disappear. As the taste of each dish is savored, time passes quickly and most pleasantly.

Clad in her chef's jacket, John often forays into the dining areas to converse with the guests. The gracious surroundings and fine cuisine are indeed memorable, but the magic that makes La Corsette so unforgettable is the grace and personality of proprietress John . His congeniality most certainly adds an intangible dimension to this dining bed-and-breakfast experience.
